Fresh Strawberry Pie
1 Quart large, firm strawberries
3 tablespoons cornstarch
1/2 cup water
1 tablespoons lemon juice
1/4 teaspoon salt
1 cup sugar
1 baked pie shell
Wash and hull strawberries. Mix half of them with cornstarch and water. Crush. Add lemon juice, salt and sugar. Microwave on high, stirring every minute until mixture thickens, about 6 minutes. Cool. Pour rest of berries into baked pie crust, and cover with cooked mixture. Cool. Top with whipped cream, if desired. Refrigerate until ready to use.
