Pecan Pie
3 eggs
1 cup light corn syrup
1 tsp. vanilla
1/2 cup sugar
1/4 cup melted butter
dash salt
Put 1 cup broken pecan pieces in the bottom of an unbaked "9" deep dish pie shell. Pour mixed ingredients over nuts and bake for 40-50 minutes at 350.
Chicken Tortilla Soup
1/2 cup onion
1 tsp cumin
1 T. cooking oil
3 T. snipped cilantro
5-6 Flour tortillas
2-3 cans tomato sauce
2 cups water
1 T. chopped parsley
1 tsp chili powder
1/2 cup cheese
2-3 cut-up cooked chicken
Combine water, tomato sauce, onion, cumin, cooking oil, cilantro, parsley, chili powder and chicken in crock pot. Cook for about 3 hours, then add cheese. Then cut flour tortillas in 1/8 inch squares and fry them until they are brown(about 2-3 mins) Then add them to the soup. Add more water to your consistency. Then let it cook for another 1/2-1 hour. Then pour in bowl and top with crumbled tortilla chips and cheddar cheese.
Meatless Burrito Bites
Pam no stick cooking spray
1 can Ro*tel diced tomatoes and green chiles
1 cup instant rice
1/3 cup water
1 green pepper, diced
2 green onions, sliced
2 cups shredded cheddar cheese, divided
1 can fat free refried beans
10 flour tortillas
1 cup salsa
Preheat oven to 350. Spray a 9 1/2 inch baking dish with pam. Set aside. In a medium saucepan combine rotel, rice and water; Heat to a boil, reduce heat, cover and simmer 1 minute. Remove from heat and let sit 5 minutes or until all liquid is absorbed. Stir in beans over each tortilla to within 1/8 inch from edge. Layer rice mixture over beans; Roll up. Place seam side down in prepared baking dish; cover with foil, bake in preheated oven 25 minutes or until hot. Cut into pieces if desired. Top with salsa and cheese. Return to oven and bake 5 minutes or until cheese is melted. Serve and enjoy!!!
